Ingredients required for semolina cream barfi:

Semolina – 1 cup, cream – 1 cup, milk – half cup, sugar 1 cup, small cardamom, almond pistachio shavings, almond pieces – 1 tablespoon

Method of making semolina cream barfi:

First step: To make semolina barfi, first turn on the gas. Place a pan on it. When the pan gets hot, add semolina to it and fry it on medium flame till it turns light golden (keep in mind not to roast it too much). When the semolina gets roasted, turn off the gas. Now take out this semolina in a vessel.

Second step: Now, add one cup of cream in the pan (the cream should not be more than three days old). Now the cream will slowly melt. Keep stirring it. Since you are making semolina barfi without mawa, ghee and sugar syrup, we have used cream for taste. When the cream melts well, add half a cup of milk and stir both of them well on medium flame. Now crush some cardamom and add it to it.

Third step: Now add roasted semolina to this mixture and mix well. Now reduce the flame of the gas to medium so that it can be roasted well. Now add 1 cup of sugar to it and cook well. After some time, turn off the gas.

Fourth step: Now take a plate to freeze the barfi and add half a teaspoon of ghee in it and spread it well all around. Now pour the semolina mixture in the plate. To get a good shape of the barfi, press the mixture and make it uniform and add some chopped almonds and pistachios on top. Now keep it for 2 to 3 hours to freeze. After three hours, cut this mixture into the shape of barfi. Now, enjoy the flavorful barfi. You can consume this barfi for a week.

Note: Making semolina ki malai barfi is very easy. But, roast the semolina on medium flame only, this makes the taste very amazing.
